Canadian chef and restaurateur Andrea Carlson opened Burdock & Co. in Vancouver’s Mount Pleasant neighbourhood in 2013. In 2022, it became the first Canadian restaurant owned and operated by a female chef to earn the coveted Michelin Star. In addition to her farm-to-table Michelin-starred restaurant, she also owns and operates Harvest Community Foods, a local foods grocer and ramen bar, and Bar Gobo, a wine bar in the Chinatown neighbourhood of Vancouver. 

 

Called ‘The High Priestess of Pacific Northwest Cuisine’ by En Route Magazine, Andrea has positioned Burdock & Co. to be on the leading edge of sustainable dining by nourishing relationships with local growers, producers and foragers, investing in people and practices that celebrate the natural world, sustainability, and organic ingredients. In this light, Burdock & Co. is Andrea’s culinary love letter to the land, the people who nurture it, and the seasonal rhythms of the majestic Pacific Northwest.

 

At Burdock & Co, Andrea composes her Moon-themed tasting menus around hyper-regional botanical motifs that wax and wane with the micro-seasons. The full-moon names are drawn from Indigenous calendars and the Old Farmer’s Almanac. 

 

“I keep thinking about the term ‘lighthearted" she says, "There is a light touch at Burdock, a lightness in the way we work — a lightness in the food. Our job is to let the food and wine tell a story — of the land they came from, of the people who spent so much effort growing, tending, foraging — and we are privileged to be a small part of that story.”

What Is Burdock & Co?

Chef Andrea Carlson has positioned Burdock & Co. to be on the leading edge of sustainable dining since it opened in 2013. By nourishing direct relationships with local growers, producers and foragers, Burdock & Co. invests in people and practices that celebrate the natural world.
 
The evolving Moon Menu Series at Burdock & Co. grew out of the dedication to these values. The six set menus of the yearly cycle take their inspiration from the micro-seasonality of the Pacific North West. Each menu is built from locally grown, of-the-moment produce, expressing a unique botanical language in consistent signature dishes while allowing for evolution and evolving expression.
 
These menus unfold with a nimble adaptability in relationship with growers, to identify what is sustainable to procure from the earth at any given time.
