Time is defined by the natural cycles surrounding and inspiring us.
The place? …the Canadian Pacific Northwest…British Columbia…a tangle of islands, coastlines, and deltas. A convergence of valleys and urban gardens.
The food?…a natural abundance of ingredients cared for by growers, farmers and foragers…a way of cooking that trusts the raw material to shine.
And the wine…we seek out wines that are produced with values that match our own…respect for the land, artisanal techniques, no unnatural additives. Wines that sing of the place they are from. They are wines that make us happy, make us dream.

Burdock and Co has been on the leading edge of sustainable dining since the day we opened …
In partnership with local, regenerative, small-scale growers, we identify what is sustainable to procure from the earth at any given time … We work carefully to source our seafood and animal offerings from local fishers and humane farmers … Our wine list is chosen from winemakers who engage in natural, organic and low-intervention practices.
Our commitment to the environment extends to our upcycled interior design … our comprehensive composting, recycling, and no-waste delivery program … green restaurant building systems … collaborations with local ceramicists … sustainable employment, education, and healthcare for our staff … and the CSA program we run through our sister restaurant, Harvest Community Foods, which supports the very same producers sourced for our menus at Burdock and Co.
